2008 billecart salmon Elisabeth salmon brut rose. Nose has a lot of strawberry but a note of spice in the back end. The champagne is very tight so I’m glad I have another bottle or two to see what the years do to them. The palate is very flowery and soft the acidity brings in some quick spice notes as well but this is with it only being open for about 5 minutes
