Dom proves adage, Champagne goes with everything. Lush mousse, lemon, with minerality that complemented the grilled scallops, acidity that complimented the grouper meunière, and a toasted almond quality that complemented the apple pie. An occasion to remember.

Hype=Exceeded. Lush, soft, tasted great even warm and flat at the end of the meal. Truly superb.

Still needs some time to integrate, showing big flavors and texture that are a little separate in layers right now.

Rich and harmonious with mineral and fruit in balance - as always a special wine

Amazingly refined yet powerful. The first of 5 Doms at Quay Restaurant in Sydney hosted by Tyson Stelzer. This 2006 was richer and rounder than usual with texture viscosity and above all Tension. Great potential.

Fully ready now, but preceded by 40 year-old Glenfarclas, I'll defer any further comment.

Have had this DP a few times over the past year and whilst pleasurable, I don't think it comes close to the '04. It's a little dry and brittle for my taste and doesn't develop unlike the 04.. Still it's not bad and I've certainly had worse, just question whether it's worth the $$$??
