Hint of roasted nuts and popcorn, on the nose; toasted brioche, toasted hazelnut, caramel popcorn, lemon curd and sea spray on the palate. Med plus to high acidity, med plus to long finish. Had fried langoustine wrapped with perilla leaf and cream uni and nasturtium. Too buttery and toasty from my liking but with this dish, it’s a wonderful pairing!

On the nose; macerated lemon & golden apple, just a whiff of apple cider, overripe pineapple, lemon custard, the citrus flesh in marmalade, lime pith with some flesh, sea spray, chalkiness, yeast, yellow lilies, citrus blooms and white spring flowers. The body is full & rich. Acidity is sharpe & crisp. Macerated lemon & golden apple, just a whiff of apple cider, a little bit of sour green apple, overripe pineapple, lemon custard, the citrus flesh in marmalade, lime pith with some flesh, sea shells, chalkiness, round grey volcanic minerals, yeasty, doughy, bread, yellow lilies, citrus blooms and white spring flowers. The long finish is rich and is excellently executed. Photos of; Dom Perignon-Moët & Chandon, the statue of the lengendary Dom Perignon who was given credit for inventing Champagne, but that’s just an Urban Legend, cellar shot of a large cask and aging Champagne bottles and one of their beautiful vineyards. @Delta Sky Lounge ATL

Imagine if angels came down to a vineyard, gently plucked each grape, kissed it ever so gently and delicately placed it in a bottle. Then, the bottle is stored in a cellar carved by the Romans and is finally delivered to your pallet -- bringing you this heavenly delight in a glass. This my friends is Dom. It costs a lot for a lot of reasons but you have to have it at least once in your life. Delicate. Smooth. Delicious. Godly. Mythical. Save for the truly special occasions and savor each sip!!
