This lovely Red Burgundy was so delicious with sautéed fish and clams the other night that I needed to spread the word! It’s got the lightness, the freshness and the lovely fruit that makes it a perfect red for seafood. But it’s also got some spice and backbone—enough to make it great with heavier foods. Yup, the wine is kind of perfect for everything! It comes from the Haute Côte de Beaune village, Paris L’Hopital, where the unusual granite soils give the wine acidity and tannins. The Chantereve team fermented this bottling with 100% whole clusters (1st time) and aged the wine in used barrel
