All the things I love in a skin contract white wine. This eschewes the more common apricotty notes in favor of confit lemon and Mandarin orange, backed by great texture, tart acidity and a kiss of Brett. Evolves dynamically over the course of the evening, always showing a new pique of interest. Wine for lambic lovers. NB: Stand this up for a while and carefully open and decant - otherwise you'll end up with a hazy, New England style IPA situation.

Need to be standing up 24 hours before opening to let all sediments settle, and decant before drinking - Pure and reminiscent, reflecting the genius of Ales Kristancic - Spicy, the wine is dry, elegant, bitterish (the grape skins disintegrated and remained in the wine) and youthful. Grape notes on the nose are overcome by a fine note of wood. Plenty of character and a fine, long aftertaste. An extraordinary wine.
