When I asked Charles Neal, the noted Calvados authority and author of Calvados: The Spirit of Normandy, who in his opinion was the greatest producer of Calvados, his answer was instant and unequivocal: Adrien Camut. Let’s start with terroir. Camut has undoubtedly the best address for his apple trees, as he is located in the sweet spot of the Pays d’Auge. And his fruit is entirely apple – pears are permitted in Calvados but none are used in Camut’s Calvados. The fermented apple juice is distilled twice, including with a 75-year-old wood-fueled still! The spirit is then raised in oak barrels, many of which are 50 years old or even older. I love the entire range of Camut’s Calvados. The younger spirits are some of the most refreshing and appliest brandies I have ever tasted. The older spirits, well, they are shockingly profound.
