AUSTRALIA : SOUTH AUSTRALIA : McLAREN VALE + ADELAIDE HILLSSUSTAINABLE : Mataro, Lagrein, Arneis, Nero d'Avola, ZibibboCRANBERRY, POMEGRANATE, BLOOD ORANGE, RED CHERRY, PINK PEPPERCORN, FROTHY BUBBLETim Wildman MW built this pét-nat with a logic that sounds simple and tastes like nothing else: press the reds hard — extracting maximum pop from Nero d'Avola and Mataro at the 12-year-old Trott Vineyard in McLaren Vale — then dilute the tannin load with up to 30% whites, Arneis from 37-year-old Adelaide Hills vines and Zibibbo from 70-year-old Riverland plantings. The result is a color that doesn't fit any existing category: a dazzling cranberry that lands somewhere between red, yellow, and orange.2022 South Australia was close to perfect — excellent conditions and good yields, matching the celebrated 2021 vintage. Six grapes, four vineyards, three sub-regions: native fermentation in stainless, zero sulphur, no filtration, no fining, crown cap. Bottled at ~12 g/L RS to complete fermentation in bottle at a gentle 3 bars — frothy foam, not aggressive fizz. Decanter 93 pts: "a banger." Wine Front: 91 pts. Jancis Robinson: 16/20.PAIRINGS : Prosciutto and burrata salt and creaminess play against the wine's bright acidity; the bubble lifts both Margherita or prosciutto-arugula pizza the producer's own pairing suggestion; tomato acidity and charred crust find a natural match Chilled shrimp with romesco red-fruit and citrus cut through the sauce; red pepper and spice echo the wine's finish
