This beautiful, well-balanced single-vineyard Assyrtiko (grown just 3km from the Aegean Sea) has high acidity, intense minerality, lemon zest, fleshy white peach, and a long finish… Although ultimately refreshing and zippy, it is a solidly medium-bodied white with some nice texture and weight, allowing for substantial ageing potential. WINEMAKING : Single vineyard; super small yields from 60 year-old vines; wild fermentation; fermented & aged in stainless on the lees for 6 months FARMING : Practicing Organic (Conversion) PAIRING : Pan Fried Halloumi with Honey (but shines with or without food!)
