GREECE : KAVALA : MOUNT SYMBOLO ORGANIC : Rozaki MEDIUM-BODIED, WHITE FLOWERS, CITRUS, WHITE CHERRY, MINERAL, NO OAK Rozaki is an ancient Greek variety grown for millennia as a table grape — Tsikrikonis was the first winery anywhere to bottle it as wine. The vines are 60+ years old, planted at the foot of Mount Symbolo in Kavala, 1 kilometer from the Aegean Sea at 250 meters elevation. No added yeasts, no oenological shortcuts: wild fermentation, then 6–8 months on selected lees for texture and length without any oak. Third-generation family winery, 120 privately owned acres, and one of the more genuinely unusual bottles you'll find in a wine shop. ABV 13.7%. PAIRINGS : Grilled whole sea bass or daurade the mineral, briny quality mirrors the sea; acidity cuts through the fat of skin-on fish Gnocchi with parmesan and black pepper the producer's own suggestion; the wine's peppery, spicy character bridges to the black pepper Grilled shrimp with lemon and herbs the floral-herbal nose and citrus palate amplify the herbed brine
