Malt Master David Stewart developed the double maturation technique here: at least 12 years in ex-bourbon American oak, then 9 months in ex-Oloroso sherry casks, then 3 to 4 months in large tuns to marry. The bourbon wood imparts the vanilla and honey; the sherry finish adds depth, dried fruit, and spice.One of the few distilleries worldwide with floor maltings, an on-site cooperage, and estate-grown barley all running simultaneously. Balvenie Doublewood 12yr - the nose is light with a hint of wood. On the palate you get a bit more power and a full mouth warmth. Finish gives you more of that wood and heat. It’s a good, easy drinker. Won’t go out of my way to get but wouldn’t feel bad if given a dram.
