Trebbiano Spoletino — distinct from the simple Trebbiano of central Italy — is a late-ripening, thick-skinned variety capable of serious complexity. Spontaneous fermentation, no added sulfites, and a minimal-intervention approach in the cellar yield a wine that is both idiosyncratic and immediately compelling.
