The wine is aged in seasoned 630-liter oak pipes in Taylor Fladgate's lodges in Vila Nova de Gaia, across the Douro from Porto. Every year, roughly 3% of each barrel's volume evaporates — the "Angels' Share" — concentrating the wine while the color fades from dark ruby to the distinctive amber-tawny hue. The 20 Year Old is a blend drawn from Taylor's extensive reserves, assembled so the weighted average age sits around twenty years.Taylor Fladgate is one of only three Port houses to use piston-fermenter "Port Toes" technology — a mechanical replication of the old lagares foot-treading technique that extracts more aroma and flavor than conventional pump-over fermentation. For dessert, Hedy prepared Chocolate Hazelnut Torte, Hazelnut Brittle, Hazelnut Crema. Amazing creation. This screamed for a Tawny Port. It was a marriage made in heaven. These two tangoed on the palate. The wine not too sweet, showing nice amber qualities and hazelnut characters. Such a beautiful evening and a great night of great guests, food and wine!!! Although I am not really a tawny kind of guy, it is hard to deny the greatness of this wine. A lovely red amber color with a nose of toasted nuts, caramel and golden raisins. The attack is a bright sweet symphony of toasted nuts and golden raisin. This attack gives way to salted caramel and a long soft tannic finish. My only complaint is there is some serious heat on the finish that makes it slightly unpleasant.
