Simon Rouillard farms two hectares by hand and set up on his own in 2019 after apprenticing across the Loire and Jura with the movement's reference names. Fourteen days of whole-bunch maceration on native yeast, then tank-aged and bottled with no fining, no filtration, and no added sulfur. Expect a faint spritz on opening, barely-there tannins, and a savory snap behind the fruit. Serve it with a chill.
