Coutier has farmed the grand cru slopes of Ambonnay since 1619, and Antoine Coutier — fifth generation — is arguably the premier grower of Chardonnay in a village better known for Pinot Noir. His grandfather planted Chardonnay here in 1948, unheard of at the time; today that decision is celebrated, and the estate's nine hectares are in organic conversion since 2019. Forty separate plots, average vine age 38 years, all of them south-facing Ambonnay Grand Cru.The Extra Brut Rosé is built on a base of 2022 — Champagne's "solar" vintage, warm and dry through summer, the healthiest fruit the region had seen in fifteen years. Assemblage method: still red Pinot Noir is blended with Chardonnay to build color and depth without bleeding from maceration. At Extra Brut dosage (0–6 g/L), the Ambonnay mineral character is the final word.PAIRINGS : Oysters on the half shell chalk-driven acidity mirrors brine; low dosage keeps the pairing clean Smoked salmon with crème fraîche brioche in both; the acidity cuts the richness cleanly Charcuterie and aged Comté red fruit on the palate plays off cured pork; Comté amplifies the nutty brioche note
