SOUTH AFRICA : STELLENBOSCH SUSTAINABLE : Cinsault LIGHT-BODIED, STRAWBERRY AND CREAM, PINK PLUM, RED RASPBERRY, HIGH ACIDITY, NO OAK Nice Beverage Co. was founded in Cape Town in July 2020 by Hardy McQueen, a chef turned wine négociant with a clear mission: build a table that includes the South African winemakers who've historically been excluded from it. Every wine in the portfolio comes from a winemaker rooted in a marginalized community — and the only house rule is low intervention, starting with wild fermentation. Winemaker Kayleigh Hattingh harvested these old-vine Stellenbosch Cinsault (planted 1991) on February 27, 2023 — ahead of the March rains that would complicate the rest of that vintage — then gave the juice a two-hour maceration before pressing. Spontaneous fermentation in tank, bottled mid-ferment, four and a half months on lees, then disgorged. The result is exactly what méthode ancestrale is supposed to be: a wine that still tastes like fruit. RS at 3.2 g/L keeps it dry; 12.1% ABV keeps it drinking easy.
