ITALY : LAZIO : VITORCHIANO ORGANIC : Sangiovese, Ciliegiolo, Merlot LIGHT-BODIED, RED CHERRY, EARTH, TEA, NO OAK Made by approximately seventy Cistercian nuns at Abbazia di Vitorchiano, ninety kilometers north of Rome. The sisters have farmed their five hectares organically since the early 1990s; the wine takes its name from the benedic — the blessing a younger sister asks of an elder when passing in the corridor, a daily ritual drawn from the Rule of Saint Benedict. Winemaking consultant Giampiero Bea (son of Paolo Bea of Umbria) began advising the community in the early 2000s, and the wines are sold exclusively to the US and Japan. Fermented 15 days on skins with ambient yeasts in old steel tanks and fiberglass containers. No oak, no fining, no filtration. 11% ABV. Grows on volcanic tufa soils. Serve slightly chilled. On the nose, the wine is developing with pretty notes of bright wild cherry, mixed flowers, some dried herbs and earth. On the palate, the wine is dry it’s medium tannin and medium+ acid.
