MEXICO : JALISCO : ALTOS DE JALISCO 100% Blue Weber Agave MED-BODIED, VANILLA, SPEARMINT, GREEN PEPPER, OREGANO, BLACK PEPPER Milagro was founded in 1998 by two Mexico City friends who recruited Pedro Juarez — 35 years in the industry, one of the most respected distillers in Mexico — to make the tequila they couldn't find on the market. The agave comes from the Jalisco Highlands (Altos de Jalisco), where red volcanic soil and high altitude push the blue Weber plants to grow slowly over 8 to 12 years before harvest by hand. Production is a deliberate two-still approach: a traditional pot still for the first distillation to capture fresh agave character, then a column still for the second pass to clean and sharpen the finish. The piñas are slow-roasted in brick ovens for 36 hours and fermented for 72 hours — longer than most highland tequilas — before distillation.
