FRANCE : BURGUNDY : AUXEY-DURESSES ORGANIC : Aligoté LIGHT-BODIED, LEMON PEEL, GREEN APPLE, WET STONE, MINERAL, NO OAK Alex Gambal came to Burgundy from Washington, D.C. in 1993 — left the family business, enrolled in viticultural school in Beaune, and in 1997 established his négociant house on the Côte de Beaune. Now owned by the Boisset family, the maison farms around 30 acres of organically tended vines and sources fruit from trusted growers across the region, treating Aligoté with the same seriousness as the grands crus. The 2022 was harvested from 25- to 40-year-old vines in Auxey-Duresses, fermented with native yeast in old neutral oak, and aged 12 months before bottling. The result is precise and mineral-driven — more focused than most village-level Aligoté, with a saline-edged finish that earns the variety its current renaissance in Burgundy. PAIRINGS : Oysters on the half shell the wine's mineral salinity mirrors the briny shell Moules marinières bright acidity cuts through the buttery broth Sole meunière citrus notes echo the lemon-butter preparation
