Working with old bush vine Cinsault from Paarl while based at the southernmost tip of Africa, DeRuisé applies Beaujolais carbonic maceration: whole clusters go into sealed barrels sparged with CO2 for 18 days, then into an old wooden basket press and on to wild fermentation in 300L French oak.Only 1,200 bottles produced.
