Kontozisis Organic Vineyards has been farming these plots since 1991, certified organic from the start, and the estate's work with Limniona helped bring the variety back from near-obscurity as a blending component.The wine spends 25 days in stainless steel on its skins — spontaneous fermentation only, ambient temperature, no press — then six months on lees before bottling with zero sulfites added.
