Raffaele Pagano of Joaquin owns 0.8 of them — a co-planted parcel in Anacapri on limestone and sand, buffeted by Mediterranean wind. He calls the project "triage viticulture": the recovery of indigenous varieties and the slow restoration of terraced island vineyards that would otherwise disappear.Greco, Falanghina, and Biancolella are harvested together, co-fermented, and macerated on skins for five days, then rested six months on the lees in non-thermoregulated stainless steel.
