SOUTH AFRICA : FRANSCHHOEKChenin Blanc, Sémillon, Chardonnay, ViognierMED-BODIED, LIME, GREEN APPLE, HONEYSUCKLE, SALINITY, NEUTRAL OAKThierry Haberer, Holden Manz's Cellar Master, hand-selects fruit from four Western Cape appellations — Franschhoek, Banhoek, Wellington, and Simonsberg-Paarl — for this white blend, keeping each component separate through fermentation before assembling the final wine at year's end. The result is a wine with more going on structurally than its price would suggest. The 2022 vintage saw ideal harvest conditions: good mid-season rain into December, then hot and dry through January and February. Twelve months on lees and spontaneous fermentation in a mix of neutral French oak and stainless steel. The Sémillon delivers the texture, the Viognier the floral aromatics, the Chenin the acidity and length, and the Chardonnay a fine, mineral frame.PAIRINGS : Pan-seared halibut with butter sauce lees richness ties to the sauce; acidity keeps it clean Oysters and chilled shellfish the salinity and Sémillon wax echo oyster brine Roast chicken with cream sauce full mouthfeel and Chardonnay base built for poultry and fat
