They're not part of a spirits conglomerate, which is unusual for a gin house of this age and recognition.Old Tom is gin's pre-Prohibition style: sweeter than London Dry, with a rounder texture that defined the original Tom Collins and Martinez. Hayman's version helped revive the category in 2007. The recipe uses ten botanicals — the "Hayman 10" — macerated for 24 hours and distilled over two days in traditional copper pot stills. A small post-distillation sugar addition delivers the characteristic softness without obscuring the botanical structure.Difford's Guide rated it Exceptional in 2025. World Gin Awards named it England's Best Old Tom in 2023.
