IRELAND : COUNTY CORK Malted & Unmalted Barley (Single Pot Still) MED-BODIED, SPICED APPLE, RED BERRY, VANILLA, AUTUMNAL SPICE Green Spot is Mitchell & Son's flagship expression — a Dublin wine merchant house established in 1805 and one of the last Irish whiskey bonders still in operation. The Château Léoville Barton finish is the first time a single pot still Irish whiskey spent time in Bordeaux wine casks: 12 to 24 months in barrels from an estate named for Thomas Barton, an 18th-century Irish merchant who built what became a St-Julien Second Grand Cru Classé. The base is matured roughly seven to ten years in ex-Oloroso sherry and ex-bourbon casks before the Bordeaux finish brings in redcurrant, raspberry, and a faint tannic dryness.
