Fruit comes off sandy soils over limestone near the ocean in Mount Benson — cool maritime, a long way from the warm-Shiraz cliche of Barossa or McLaren Vale. Whole-bunch carbonic for a week, then gentle destem and a 24-hour skin contact before pressing. Wild yeast, minimal sulfur, unfined, unfiltered. The result is a chillable, low-tannin Shiraz — raspberry and rhubarb up front, white pepper through the middle, a flicker of earthy funk and the gentle VA lift natural-wine drinkers will recognise.
