It needed some time in the decanter (one hour at least) before it fully showed it's energetic minerality, striking precision and cool toned expression. In combination with a little richness in texture this makes it an absolutely outstanding wine.

Served with an English Pea "gnudi" (see the Vespertine summer menu for more info). On the nose: lovely grass and gooseberry, sweet pea (brought out by the pairing), grapefruit. On the palate, fantastic acidity, gooseberry, tarragon, sweet apple, yuzu, kumquat and a lovely tangy finish.

Lovely at cellar temp. Pop and pour. Sweet tarragon, a touch of va, melon, melon rind, a touch of vanilla, gooseberry, and great richness. Lovely acidity and density, more sour apple, gooseberry, grapefruit pith and nut oil. Very nice.
