ITALY : SICILY : ETNA ORGANIC : Nerello Mascalese, Malvasia, Moscadella, Catarratto LIGHT-BODIED, WILD STRAWBERRY, BLOOD ORANGE, ALPINE HERBS, SALINE, NO OAK Frank Cornelissen calls this a rosato, but he is just as happy to have you treat it as a light red — closer to a Jura Poulsard than anything pale and polished from Provence. Malvasia, Moscadella and Catarratto go in alongside Nerello Mascalese, all old-vine fruit from the estate's parcels in Etna's northern valley. The grapes are destemmed and gently pressed, spend about ten days on the skins, then ferment on native yeasts in neutral epoxy tanks — no wood at any stage, no fining. Susucaru sits at the entry point of the Cornelissen range, made with the same farming and cellar thinking as the Munjebel and Magma bottlings. Serve it cool, not ice-cold, and give it a few minutes in the glass.
