FRANCE : LOIRE VALLEY : COUR-CHEVERNY Romorantin MED-BODIED, MINERAL, ACID, APRICOT, GRAPE, SMOKE, ROASTED NUTS, NO OAK One of the most recent appellations of the Loire Valley (designated 1991), Cheverny has produced wine since the 6th century. The 'Vendages Manuelles' cuvee from Francois Cazin is made from 100% Romorantin, an ancient local grape rarely seen outside the region. The wine is strikingly high acid and mineral, yet textured and somewhat nutty – undeniably unique, but if we had to compare, it's a bit like a cross between a Chenin Blanc and a Chardonnay. FARMING : Sustainable WINEMAKING : Low-intervention / Natural; unfined/unfiltered PAIRING : Soufflé au Fromage
