PORTUGAL : DOURO Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca FULL-BODIED, BLACK CHERRY, BLACKCURRANT, CASSIS, JAMMY PLUM, OAK Fonseca has shipped Ruby Port since the house was founded in 1815 — this is the style the house was built on, and the production philosophy has not changed. After a short fermentation on skins, the wine is fortified and transferred to large seasoned oak vats for two to three years. Large format aging is the key decision: where small barrels create the oxidative, nutty complexity of Tawny, large vats preserve the wine's vivid ruby color and keep its black cherry and cassis character intact. Straightforward by design — the goal is fresh, fruit-driven Port that drinks well tonight without requiring a cellar or a case study. The 20% ABV is warm but balanced by the fruit; the tannins are soft and integrated. A practical bottle from one of the Douro's most respected houses. PAIRINGS : Dark chocolate truffles bittersweet chocolate amplifies the ripe fruit and softens the tannins Stilton or Gorgonzola salt and fat cut the sweetness cleanly Braised short ribs the wine's body and tannin structure hold up to rich red meat
