He built Fabrica de Mezcal del Amigo in 2006 and founded the Del Amigo brand to bring the family's mezcal to the US market on his own terms.The cooking is split: half earthen pit lined with volcanic rock and black oak, half dry radiant heat — a deliberate choice that moderates smoke without eliminating it. Milling is likewise divided between tahona and roller mill. The agave is harvested as Capon, with the flowering stalk cut before bloom to concentrate sugars in the piña.
