MEXICO : JALISCO : LOS ALTOS 100% Blue Weber Agave FULL-BODIED, VANILLA, BURNT TOFFEE, ROASTED AGAVE, BITTER CHOCOLATE, OAK Don Julio González started distilling in 1942, at seventeen, and spent forty-five years making tequila largely for family and friends before the brand carried his name to market. Sixty years in, the family put the founding year on a bottle. The liquid comes off pot still No. 6 — one small still filling roughly three barrels a run — then sits up to 32 months in recharred ex-bourbon American white oak. Six months short of extra añejo, and it drinks like it. Highland agave does the rest: red clay above 2,000 meters, a seven-to-ten-year growing cycle, slow-cooked in masonry ovens.
