FRANCE : BURGUNDY : MOREY-SAINT-DENISCERTIFIED ORGANIC : Pinot NoirMED-FULL BODIED, DARK CHERRY, BLACKBERRY, TAR, VINE SMOKE, DARK CHOCOLATEThe Trilogie is Lignier’s Morey-Saint-Denis village wine, drawn from three lieu-dits all planted by Laurent’s grandfather between the late 1940s and early 1960s: Chenevery (60%), Les Porroux (30%) on the Chambolle border, and Clos Solon (10%) in clay-rich soils. Old vines — 60-plus years — and a blend designed to deliver more complexity than any single parcel would at village level.Domaine Hubert Lignier is a five-generation family estate in Morey, certified organic since 2019. Laurent has run the domaine since 2006. In 2022, one-third of the fruit went in whole cluster; a 5-day cold soak preceded 2–3 weeks of fermentation in open cement vats with daily pigeage; 22 months in the estate’s cold cellars — no racking, no fining, no filtration, roughly one-third new oak. The 2022 Côte de Nuits vintage combined dark-fruit richness with classical freshness and a saline, sapid finish. The Trilogie earned 94 points from Decanter. Imposing now; drink from 2028.PAIRINGS : Duck confit the dark fruit and firm tannin cut through the fat — the classic Burgundy match Roasted rack of lamb with herbes de Provence structure handles the lamb; the wine’s earthy spice ties to the herbs Aged comté or mimolette earthy, nutty depth mirrors the wine’s earth and dark chocolate notes
