FRANCE : BURGUNDY : MOREY-SAINT-DENISBIODYNAMIC : Pinot NoirMED-BODIED, WILD STRAWBERRY, MORELLO CHERRY, DARK PLUM, LOAMY EARTH, OAKJacques Seysses founded Domaine Dujac in 1968 — the name a contraction of "du Jacques," the domaine of Jacques — after training in Volnay and purchasing a small estate in Morey-Saint-Denis. Now run by the second generation (Jeremy, Diana Snowden, and Alec Seysses), the domaine has been certified organic since 2011 and practicing biodynamics since 2003, with hand-harvesting and whole-cluster fermentation at the core of every wine. The 2023 vintage brought heat, concentration, and energy to the Côte de Nuits — a year critics compare to 1999, running brawnier and more fruit-forward than Dujac's typical village style. Wild strawberries, Morello cherries, and a faint touch of damp loamy soil on the nose give way to a supple, fleshy palate with slightly grainy tannins and real length. 91 pts Wine Advocate.PAIRINGS : Duck confit with braised lentils earthy legumes and rendered duck fat align with the wine's cherry and loamy soil character Lamb chops with herbes de Provence the herb crust and medium tannins find a natural Burgundy foil Comté aged 18 months earthy, nutty character mirrors the terroir notes — a classic pairing for the appellation
