A fruity, gourmet frame, with a hint of liquorice and crunchy freshness on the tannic structure. Organic and Biodynamic Agriculture, a vine planted in 2010, managed without pruning. Vineyard with permanent grass, with sheep and sheep grazing during the winter period. Harvest in the second half of September. Total destemming. Traditional maceration, without yeast, for 6 days at low temperature. End of alcoholic fermentation in vats before racking then malolactic fermentation. Aged for 3 months in stainless steel vats protected from oxygen. A light raspberry color. The nose is of wild strawberries, a little leathery and slightly peppery. The palate is supple and fresh, with notes of blackcurrant and morello cherry, wet foliage and warm spices. The finish is refreshing and clean.
