New York lifted its own ban in 2003, largely through the advocacy of Hudson Valley botanist Greg Quinn. Rachael Petach founded C. Cassis in 2020 in Rhinebeck, a few miles from Quinn's farm, where she still sources most of her fruit. Everything from fermentation to bottling is done by hand.The process: lightly ferment and press Hudson Valley blackcurrants, blend with organic neutral spirit, wild honey, and whole botanicals — cardamom, bay leaf, lemon verbena, citrus rind. At 16% ABV, it's drier and more herbal than traditional Burgundian cassis, with real acidity and structure. Edible Manhattan: "plenty of fruitiness, backed by a spicy, herbal brightness, and jaunty acidity, with none of the leaden, syrupy thickness of more mainstream cassis."
