SPAIN : CATALUNYA Sumoll Blanc MEDIUM-BODIED, SKIN CONTACT (ORANGE WINE), APRICOT, CITRUS, DRIED FRUIT, HONEY, STONE  This Brisat (Catalan for “orange wine”) from Costador Terroirs stays on the skins for 6-8 weeks in amphora, giving it a beautiful amber color, and a bit of bite.  FARMING : Biodynamic WINEMAKING : Natural / Low-Intervention : spontaneous fermentation; unfined, and unfiltered; low sulfur. Aged in amphora for seven months.  PAIRING : Grilled Aubergine and Walnut Paste
