FRANCE : BORDEAUX : CASTILLON-CÔTES DE BORDEAUX BIODYNAMIC : Merlot, Cabernet Franc FULL-BODIED, RED FRUIT, UMAMI EARTH, SALINE MINERAL, OLD OAK Régis Moro founded this estate in the early 1980s on the rolling hills of Castillon-Côtes de Bordeaux — just kilometers from Château Le Puy — working organically from the start and incorporating biodynamic treatments, while keeping the cellar radically hands-off: spontaneous fermentations, no temperature control, no new oak, bottled unfined and unfiltered. “Johanna,” named after his granddaughter, is Moro's prestige cuvée, drawn from vines averaging 70 years old (the oldest parcel dating to 1904). Fermented for 60 days in tronconic oak casks after a 48-hour cold soak, then aged 18 months in old barrels before bottling — the 2000 vintage, harvested in perfect late-September conditions, gave this wine the authoritative power to age gracefully for 25 years. These bottles arrived via Rosenthal from the undisturbed estate cellar the Amoreau family (Château Le Puy) inherited when they purchased the property in 2022. PAIRINGS : Roast leg of lamb with rosemary earthy Merlot depth cuts through the richness without overwhelming the meat Braised beef short ribs saline mineral acidity lifts each bite through long-cooked collagen Aged Comté (24 months) crystalline, nutty cheese stands up to the wine's complexity; classic French affinity
