USA : CALIFORNIA : NAPA VALLEY Cabernet Sauvignon FULL-BODIED, BLACK CHERRY, CASSIS, COCOA, TOBACCO, OAK Chuck Wagner opened Caymus in 1972 with his parents and 240 cases of Cabernet. Fifty-plus years on the family still owns all of it, and the Napa Valley bottling is still built the same way: fruit pulled from eight of the valley's sixteen sub-appellations, Coombsville up to Calistoga, valley floor for lushness and hillside for backbone. What sets the house style is hang time. The fruit stays on the vine longer than most growers will risk, which deepens color and softens tannin, and it's why a young Caymus drinks well the day you open it rather than a decade out. 2021 was Napa's drought vintage — eight inches of rain against a normal thirty-plus, and a crop down 20 to 60 percent depending on the site. Small berries, thick skins, more concentration per bottle. Wine Spectator 92 pts, James Suckling 94 pts. Dark Ruby with aromas of ripe berry fruit and floral spice, pure Caymus signature style, easy drinking, approachable as always. On the palate flavors of ripe blackberry, black cherry and currants with complex spice showing notes of cacao, cinnamon and rich vanilla oak. Fine soft tannins, nice mouthfeel, great balance with acidity, long finish, ending with notes of oak and mineral notes. Nice!
