SPAIN : CANARY ISLANDS : LANZAROTESUSTAINABLE : Listán NegroMED-BODIED, TART RED CHERRY, VOLCANIC MINERAL, SMOKE, DRIED HERBS, OAKLanzarote is 125 km from the African coast — bone dry, swept by Atlantic and Saharan winds, blanketed in volcanic rock from an eruption that lasted six years in the 1730s. Each vine here is planted in a hoyo, a hand-dug hole through the lava crust, surrounded by its own stone wall for wind protection. Yields run around 16 hL/ha. All work is done by hand.Listán Negro survived phylloxera only here, on these volcanic islands — essentially extinct on mainland Spain. This is the traditional-maceration tinto from winemaker Ignacio Valdera, aged 5 months in French Allier oak for structure and depth. More concentrated than Bermejos' fresher carbonic maceration cuvée; still driven by the grape's signature tartness and mineral spine.PAIRINGS : Roast lamb with herbs the wine's tart structure and mineral edge are built for herb-crusted lamb Grilled pork with Padrón peppers fresh acidity cuts through pork; the mineral note rhymes with charred peppers Aged Manchego with marcona almonds volcanic minerality and smoke echo the nutty, salty character of aged Manchego
