SPAIN : JEREZ  Palomino Fino LIGHT-BODIED, DRY CASHEW, IODINE, HAZELNUT, SALTY, VIBRANT    Caberrubia is a blend of single vintage Fino sherries from the best fruit of the estate's single vineyard, El Corregidor.  This vineyard was planted to 40 year old Palomino Fino vines on  called “barajuela,” where the chalky white marl is layered like a deck of cards.  Farming : Organic  Pairing : Marcona Almonds
