Every batch is single-estate and field-labeled with the parcel and planting year; this añejo draws from El Novillero and Las Rosas.The production method is the brand's whole argument: mesquite-fired stone oven cooking, tahona milling, open-air wood-tank fermentation with ambient yeast, and 19th-century copper pot stills — the only brand on the market using all of these methods together. Twelve months in ex-Napa Valley red wine American oak barrels add dried cherry, vanilla, and chocolate depth without losing the cooked agave underneath.
