Cheese rind and crushed rock mineralogy. Definitely an old world wine. Oyster shell umami and hints of yeast. The fruit is subtle, Oxidized yellow apples and pears. Wet hay and maybe a hint of lemon grass. High acid and medium length makes this a very pleasant wine to drink alone or pair with cheese
