Isaac Pirolo Delectable Pro

Matthiasson produces both a red and white Tendu. The 2015 white Tendu is Vermentino based with some French Colombard and a small percentage of a mix of Italian white varietals. The Vermentino is from weathered, pink gravelly alluvium in the Dunnigan Hills AVA. Fermented in neutral barrels, inoculated with yeast from Champagne, no ML, no batonnage and sterile filtered. Pear, lemon, white flowers, and loaded with minerality and acid. With its low alcohol (11.7% abv), ultra-refreshing, super-crushable style, the 1 liter bottling is a good move.
