Celebrating my mother-in-law’s birthday. She prefers champagne over red wine (and she really enjoys red wine) so this was definitely a perfect bottle. Awesome, creamy mousse. Roasted almonds, brioche, and rich key lime pie. This is definitely on the young side, but extremely enjoyable now. Very little tart notes here. Yeasty and chalk driven. Bubbles go forever. I enjoy the more oxidized style champagnes, and while this is maybe more reductive in style, there is an awesome savory/sea salt note steak down the middle of the palate here.

Strong yeasty nose, like fresh lemon bread, Yeastiness grabs your tongue with lychee, lemon, verbana and skips rope with it, adding delightfully tight and well structured bubbles each almost popping with their own honeyed explosion. Lingering finish of all these flavors, and a few moments of reflection. Right place at the right time. A lovely couple, about to get married - Brought over a bottle to a family celebration. Shared some wine with me, so l shared some Champagne knowledge, and of course, opened the bottle with the faintest of hiss. Wine bartered.

Hint of roasted nuts and popcorn, on the nose; toasted brioche, toasted hazelnut, caramel popcorn, lemon curd and sea spray on the palate. Med plus to high acidity, med plus to long finish. Had fried langoustine wrapped with perilla leaf and cream uni and nasturtium. Too buttery and toasty from my liking but with this dish, it’s a wonderful pairing!

On the palate; green apple, pineapple, lemon custard, lime, cream soda, ginger ale, gritty volcanic minerals that really penetrate the palate, sea shells, cream, bruised golden apples, brioche, yeast, yellow lilies, jasmine, beautiful acidity and a long, rich, well polished finish. @The Archer Hotel
