Showing so nicely. Fruit is there with the secondary notes taking over. Structure is surprising

Opened extremely tight, essentially in drinkable. One hour in to decanting this wine is starting to emerge from its shell. Olive, mushroom and stewed plum aromas. Bright acidity, earthy, soft tannins and just a hint of juicy fruit. Still not in prime form. Two hours after decanting, the nose is very umami, mushroom and earth with no real fruit notes. The acidity has taken a back seat to lush fruit and lots of wet, black earth. The body is building and this has become a wonderful, old wine. Three-plus hours in to the decant it's pure secondary aromas of earth, shiitake and umami. The acidity has returned as the wine has started its decline. The fruit and body are still there but the earth and spice are now dominated by acidic notes and the finish is dying fairly quickly. Still better than the first hour but sadly on the decline again. What a fun journey! Paired with roasted beef tenderloin and red wine risotto.
