The last wine of the weekend Rhone tasting. From deep in the cellar, this is Sabon’s Secret de Sabon from the ‘03 vintage tasted side-by-side with the ‘07. The ‘03 was a more difficult vintage, but the best producers, like Sabon, made stunning wines. The ‘03 has a bit less purity of flavor than the ‘07 but is still excellent. The flavor profile of ripe black fruit and kirsch is complemented by notes of roasted meat, truffle, and dense licorice. The ABV is probably approaching 16% at this point. The wine is fully mature and should be drunk in the next few years. Excellent, complex Chateauneuf! 2003 vintage on Mar, 22, 2020
