My last bottle of 2012 Robert Chevillon Nuits Saint George caught at a stage on its maturing curve, where the red fruit turns to dried fruit, rose petal is being backed by autumn leaves followed by sous bois and a dash of earthy spice. Lovely indeed!

A very good quality wine, showing both Provenance and dept with a defined souboise character. The concentrated fruit profile going from red to darker fruit with time in the glass. In its early stage of development with enough primary fruit and structure to continue and upward going curve for another 5+ years.

Continuing my Bourgogne journey with Nuit St-Georges. Garnet color, darker than the Beaune, Gev-Cham, and Morey-St.D I tried previous weeks. Nose lacks the red fruits almost completely and is more intense, rich and with darker fruits and some oak handling; taste is more tannic and rich but this first glass (15 min after double decanting) is rather tight uninteresting. Second glass (1.5 h later) showed great improvement on the nose: much more interesting, complex and intense, still only dark fruits with some mushroom and other forest aromas; on the palate however it is still unevolved and rough. I guess the textbooks are correct that Nuit St. George should not be drunk young. But this whole Burgundy experience has made me a PN fan. Kaltbach from Switzerland and chianti sausage worked wonders with melon á la vanille jam and Mary J Blige.

2012. The nose is simply evolving in the most beautiful ways. Very straightforward red cherries on opening, but with air & through dinner we get smoke and anise notes adding layers to that fruit. The palate has plenty of savory/earthy power with that spicy/anise note adding gorgeous complexity. The balance comes with a racy raspberry note towards the finish and plenty of grip on the end. Excellent.

I love me some good Chevillon and this bottle hits way above its league. A bit dusty, yet very perfumed and flowery aroma. Palate is just a tad too loud with alcohol, but very pleasant overall with stunning finish. Many things are going on here: spicy smoked meats, overripe black currant, heranium, lilies, hot plastic, generous amount of arrowwood berry, candied ripe strawberries — quite feminine overall, but grippy tannins don't give you a break. This will age wonderfully for 7-10 years easily.
