The second Bordeaux to pair with our Allen Brothers steak trio. Thought we’d do a Right Bank & Left Bank. For me, having a Right Bank after a Left Bank is the better order to have them. Merlot based Bordeaux is always a little softer. Drinks better after you’ve finished your steak. Not as food dependent. 2007 is not known as a remarkable Bordeaux vintage. However IMHO, the ones I’ve had for the most part have developed better in bottle over time than the release reviews. I would also say that about 1997 & 1999. On mouth entry, the fruits starts like Napa Cabernet for 4-5 seconds before yielding to; tobacco, cedar, stones & forest floor. Quite a good follow to the La Dame de Montrose. This wine is aging nicely, Ruby red, cranberry, black cherry, some what dry, but fruity, some earth tones, with a charred oak finish, this will grow old and become a superb wine.

This 2007 still appears quite young at this stage, much more so than other recently tasted '07 Bordeaux wines. The nose was initially very primary, with plum, blackberry, and raspberry. Over time, it did develop some truffle and earth aromas. Lots of vanilla on the nose as well. On the palate, it appeared a bit forward, and the acidity stood out a bit. Prominent round tannins. The balance just isn't there yet at this stage. I would give this wine a couple of years before opening a bottle, or give it a lot of air. The fruit is very pure and ripe, so this could develop into something very nice.
