Required a decant to blow the funk off the top but opened up real nice to compliment our bolognese tonight.

Dense inky Pauilliac delight Lean angular wine that is serious with a fun side especially for acid queens

Complex and rich but tight and tannins are still to young and powerful- needs time to balance and get rounder

Great nose, no magical tannin structure though.

Classic Bordeaux… ripe cherry, pencil lead, a bit of cedar and a touch of old leather when open and decanted for an hour. A beautiful wine with an initial acidic finish… but mellowed out with air and some time in the decanter. Fully mature… and this bottle Slightly oxidized at the edges… but no drop off in intensity. A few years left, but drinking well now.

2009 vintage. Classic Bordeaux. Dark purple color, with flowers, cherries, hint if dirt in the nose. Slightly tannic at first but nice balance with dark fruits and oak finish.

Wine Essentials: Classic World Wine Tour @iceculinary Institute of Culinary Education wine tasting class. Oaky, dark, intense, younger, second wine. Very focused smell, deep dark black fruits, currants, cranberry. Strong tannins, scrapy. Best with seared steak, complex sauces.
