The ‘Esprit de Tablas’ is a blend based on Mourvèdre, Grenache & Syrah, next to Vaccarese, Counoise & Cinsaut, modeled on the Château de Beaucastel rouge, while being born & raised in the unique growing environment of Paso Robles’s Adelaida District AVA. It is medium ruby in color with flecks of garnet. On the nose, are expressive ripe strawberry rhubarb, black and red cherry, plum, blueberry compote, fresh purple fig, dried orange peel notes next to violet, rose water, black licorice, star anise, crushed gravel, vanilla, sweet baking spice, clove, and meat. On the palate, it’s dry, with notable acidity giving “lift”, a generous mouthfeel, ripe and supple tannins, restrained alcohol (13.5% ABV), and a lingering finish. It’s balanced, polished, & complex with capacity to age & develop additional aromatic dimensions. It's more than a wine; it's a story of heritage & the pursuit of excellence.
